Hoi An Cooking Classes

In an effort to both take in the local culture as well as learn how to replicate some of the phenomenal cuisine that we’ve been eating since arriving in Vietnam, Ben and I took a cooking class at our favorite Hoi An eatery, Cafe 43.

We were taught by the lovely Hien, who was as patient a teacher as we could as for. After 3 hours, (and some very stained hands from dicing Indian saffron) we produced 4 dishes with a pretty high level of success.

Below are the recipes for the things we made.

Grilled Seafish in Banana Leaf

Ingredients:
6 Banana Leaves
Whole Seafish- preboiled for 5 minutes
20 Grams Fresh Ginger
50 Grams Indian Saffron
4 Lemon Leaves
5 Stalks Lemongrass
8 Shallots
2 tsp smashed garlic
1 tsp black pepper
1 tsp salt
2 tbsp vegetable oil

Directions:
Finely chop lemongrass
Dice ginger
Dice saffron
Thinly slice shallots
Roll lemon leaves and slice
-Mash above ingredients in mortar until paste

Add garlic, pepper, salt and vegetable oil. Mix with paste

Place 3 banana leaves on each side of aluminum foil for a pouch
Place ⅓ of paste as a base on banana leaves
Place ⅓ of paste inside fish
Place remaining paste over top of fish
Fold uptight and clamp aluminum foil pouch over low heat for 30 minutes, turning once

Dipping Sauce for Seafish
½ tsp peper
1 tsp salt
4 tsp lime juice with seeds

Chicken Spring Rolls
100 grams minced chicken
Soft rice paper
200 grams of boiled chickpeas diced
½ tsp 5 Spice
30 grams carrot
30 gram sweet potato (boiled until soft)
1 taro (50 Grams) (boiled until soft)
Bunch of spring onions
½ tsp black pepper
¼ tsp salt
½ tsp sugar
½ tsp 5 spice

Grate carrot
Mash chickpeas, carrot, sweet potato, and taro

Heat 10 inch skillet over low heat with 1.5 Tbsp of vegetable oil
Add 1 tsp garlic wait 1 minute and add spring onion, cook one more minute
Add skillet contents to mash
Add salt, pepper, sugar and 5 spice
Hand mix throroughly with paste

Spoon about a tbsp onto rice paper
Roll tightly, folding in ends once wrapped around once

Cook in ½ pan of vegetable oil to deep fry over low heat
5-7 minutes until golden brown
Roll spring rolls 1x to get both sides
Do not overcook

Sauteed Spinach and Garlic
1 Tbsp vegetable oil
½ tsp pepper
¼ tsp salt
¼ tsp vegetarian seasoning
1 tbsp dried garlic

Cooking:
Saute all ingredients covered over low heat for 5 minutes

Squid and Sour Fish Sauce
1 small red chile chopped diagonally with scissors
½ tsp garlic
½ tsp sugar
2 tbsp lemon juice
2 tsp fish sauce
Mix together until sugar dissolves

Stuffed Squid
1 8 inch squid tube of medium diameter
100 grams minced pork
1 tsp mashed garlic
½ tsp black pepper
¼ tsp salt
1 tsp sugar
½ white onion
25 grams carrot
Bunch of spring onion

Mix all ingredients besides squid, and leave for 3 minutes.

Dice onion, carrot.
Chop spring onion and leave separate

Place 2 tbsp vegetable oil in 10 in skilled, throw in pork mix.
After 1 minute add carrot
After 1 minute add onion
Saute until carrot is soft

Remove mix from heat, stuff inside squid tube, packing hard.
Affix toothpick across top of squid

Place 2 more tbsp vegetable oil into pan over low heat
turn squid on all 4 sides until golden brown
Use scissors to cut ⅔ down the squid tube after removing from heat
Remove toothpick
Eat with tomato and pepper sauce

Dipping Sauce for Seafish
½ tsp peper
1 tsp salt
4 tsp lime juice with seeds

All Blues in Byron

Byron Blues and Roots was a fantastic 5 day festival. The lineup was absolutely incredible, and it was a total bonus on this trip. Ben got a Facebook message offering him VIP tickets when we were in Perth, looks over at me and said,

“Hey, what do you think about doing Byron Blues and Roots? Only cost is accom.”

Keeping in the spirit of the trip, I just said yes.

Getting the chance to see Buddy Guy, Gary Clark Jr. and the Doobie Brothers at the same venue as John Mayer, Jack Johnson, Dave Matthews Band and John Butler Trio wasn’t something I was planning on passing up. The only problem with this festival was that there were too many artists we wanted to see in 5 days.

The weather was perfect (for the first time in 5 years from what we were told) and the music was amazing. The festival is intended to hold 35,000-40,000 people or so a day, and being the 25th anniversary it was sold out for at least 3 of the days.

Bluesfest

The festival itself was on a specifically designed site. A local businessman bought a tea farm about 7 miles outside of Byron Bay and excavated everything perfectly for a huge festival venue. From the culverts to the stage location, everything about this location was designed with this purpose in mind. About 60% of people camp at this festival, so you’re looking at another 20,000+ campsites plotted out as well.

The music was spectacular. From John Mayer being ripped out of his mind, singing jumbled up “dream songs” in between his hits, to John Butler Trio having 30k people sing “Betterman” we couldn’t have asked for a more outstanding musical performance.

Before arriving, we jotted down ten moments in the festival that we were particularly excited to see. At least one of us made one of them.

If anyone is a guitar fan and has a chance to see Gary Clark Jr., for the love of all that is holy go do it. He is an absolute legend with a guitar in his hands, and it is a truly incredible thing to see him go nuts.

Past that, we were pretty pleased with everyone’s performance. It was my first DMB concert, and I was impressed, if not obsessed with them. Great act, just not sure what the absurd cult-like following is about.

All and all, couldn’t be happier with the 5 days in Byron. More on the actual town to follow.

An Unexpected Beginning

Waking up at 5:15 on a -15 degree Chicago morning, I realized that the grey hairs on my head had decided to take up permanent residence. They weren’t going anywhere and neither was I. Locked into my job as a commodity trader, I had reached a point in my life where the only objective was putting more money in the bank. Sitting in front of 8 computer screens for 10 hours a day wasn’t doing much for my soul, and the prospects for adventure were limited to checking out a new bar or a 3 day ski trip to Colorado. The Chicago winter had kept me from seeing sunshine on a weekday for the past 4 months.

Something had to change.

That something was me.

Life has a way of reaching a stasis, putting us into a rut that seems impossible to escape. After a contentious bonus negotiation, I realized that more money wasn’t going to do anything to change my life. I would still be waking up every morning, trying to make money by clicking a mouse and swearing at computer screen.

I’d seen the old guys in my industry, miserable millionaires addicted to the next purchase or bonus check. I’d always known that I didn’t want to become one of those, but here I was, coming closer to that undesirable end day after day.

I knew that buying a condo or a shiny new Lexus wouldn’t do anything to make me happier. They’d just put more bills in my mailbox and keep me further locked into a job which I no longer enjoyed.

So I walked out.

The subject line to my former world travelling Australian roommate read simply:

“Quit my job. Need an adventure. Call when you can.”

Less than 24 hours later, I received a call from my favorite dingo kicker. In his coarse Aussie accent, Benny cut straight to the chase. “I’ve got two mates driving the perimeter of Australia. Fly into Perth and we’ll drive 1800 miles to Broome. We’ll fish, surf, camp and dive up the coast, then you and I will go backpack through Vietnam, Cambodia, Laos, and wherever else tickles our fancy.”

Suddenly I had an adventure waiting on me on the other side of the world. It certainly wasn’t how I’d imagined my week going when I woke up on that cold Chicago Monday morning.

A week later I had a plane ticket in hand, vaccines stuck into my arms and a 90 liter backpack which would be the extent of my worldly possessions for the next half of a year.

This is the story of that adventure.
